Serves 4

 

175g mixed white rice and wild rice

125g ready to eat dried apricots

2tbsp sunflower oil

1tbsp white wine vinegar

4tbsp lemon juice

2tbsp clear honey, warmed

1tsp Dijon mustard

salt and black pepper

 

 

Cook the rice, rince, drain and allow to cool slightly.

Cut the apricots in half and stir in with the rice.

Whisk all the other ingredients together then mix into the rice.
