Serves 4

 

400g beansprouts

2 red bird’s eye chilies, chopped

1 red pepper, deseeded and chopped

6 mushrooms, sliced

1 medium leek, sliced

1 red onion, sliced thinly

1 clove garlic, chopped

100g mange-tout

100g whole baby sweetcorn

2tbsp olive oil

2 tbsp water

2tbsp chopped coriander

150ml stir fry sauce (check ingredients to make sure it does not include fish!)

 

Prepare all ingredients in advance.

Heat the oil in a wok at a high temperature.

Add ingredients in this order (constantly keeping the food moving):

            onion

            garlic

            red pepper

            chillies

            water

            mushrooms

            leek

            mange-tout

            baby corn

            beansprouts

            sauce

Continue stirring for a couple of minutes only and serve immediately, sprinkling with the fresh coriander.
