Makes 4

 

57g/2oz onion, finely chopped

170g/6oz carrot, grated

170g/6oz courgette, grated

113g/4oz wholemeal breadcrumbs

1tbsp ground cumin

1tbsp ground coriander

2tbsp parsley, finely chopped

salt and black pepper

1 free range egg, beaten

 

Fry the onion until softened.

Add the carrot and courgette and cook gently for a further 6 minutes.

Turn the mixture into a bowl and allow to cool slightly.

Add the remaining ingredients.

Shape the mixture into four burgers and grill for about 15 minutes, turning carefully during cooking.
