Serves  2-3

 

1tbsp grapeseed or olive  oil

1 red onion, sliced thinly

1 red pepper, sliced

1 leek, sliced

1 head broccoli, chopped into bite-size pieces

100g baby corn

100g mangetout

2tbsp water

3 medium carrots, shredded

200g beansprouts

200g noodles

180ml stir-fry sauce (e.g. ginger and sweet chilli)

1 pinch coarse ground black pepper

 

Prepare all ingredients in advance.

Heat oil to very hot.

Add ingredients in the order they are listed above.

Keep contents of pan moving constantly.

Cook for a couple of minutes and serve immediately.
