4 medium sized ripe tomatoes

2tbsp olive oil

2tbsp white wine vinegar

½ tsp French mustard

1tsp caster sugar

black pepper

 

Wash and dry tomatoes. Slice thinly.

Arrange them in a shallow dish.

Mix the oil and vinegar, mustard and sugar.

Pour the dressing evenly over the tomatoes.

Grind some black pepper over the tomatoes.

Cover. Chill in the fridge for at least an hour.
