Serves 4
750g sweet potatoes
3tbsp milk
45g cheddar
1tbsp chopped parsley
1tbsp snipped chives
salt and black pepper
Peel sweet potatoes and cut into chunks.
Place in a pan of boiling water and cook for 10 –15 minutes until tender.
Drain and mash with milk, cheddar, parsley, salt and pepper.
Serve garnished with chives.
