Serves 4

 

900g sweet potatoes

1 clove garlic, peeled and crushed

25g butter

4 spring onions, sliced

1tsp wholegrain mustard

salt and pepper

 

Dice the sweet potatoes and place in a large pan with the garlic and a pinch of salt.

Just cover with water and bring to the boil. Simmer for about 15 minutes.

Add the spring onions to the pan of potatoes and cook for a further 3 minutes then drain.

Add the butter, salt, pepper and mustard and mash until smooth.
