Serves 4
1 large round loaf of bread
1 red pepper, cut in half and deseeded
1 green pepper, cut in half and deseeded
1 courgette, ends removed and chopped into four
1 large tomato
1 clove garlic, peeled
1 red onion, peeled and halved
salt and black pepper
2tbsp balsamic vinegar
olive oil
Place all vegetables with whole garlic clove in a large roasting dish and drizzle with olive oil. Cover with foil and place in oven at 200C/ Gas 6 for about 25 minutes.
Remove and allow to cool slightly. Then chop all into small pieces and mix together.
Cut the top off the loaf and hollow out the centre, mixing some of the soft bread into the vegetable mixture.
Add balsamic vinegar, salt and pepper.
Stuff the centre with the vegetables and put the top back on.
Cut into quarters and serve immediately while vegetables are still warm.
