Serves 6-8

 

175g digestive biscuits

75g melted butter

400g cream cheese

1tsp vanilla extract

3 X 90g pouches squeezed fruit – strawberry or other red fruit

284ml double cream

Strawberries to decorate

 

Grease and line a 20cm loose-bottomed cake tin or flan dish

Break biscuits into very small crumbs and mix with melted butter.

Press into bottom of tin using the back of a spoon. Chill in the fridge for about an hour.

Mix together the cream cheese, vanilla extract and strawberry pouches.

Whip cream until it is stiff but still soft and then fold it gently into the cream cheese mixture.

Spread it evenly over the base.

Chill for a few more hours. Place strawberries on the top before serving.
