1.4kg leeks, trimmed

salt and pepper

ground nutmeg

75ml light stock

 

Serves 6

 

Thinly slice the leeks and wash well.

 

Place leeks in a large pan with a tight-fitting lid.

 

Season with salt, pepper and nutmeg.

 

Pour in the stock.

 

Cover and cook over a medium heat for 5 – 7 minutes until leeks are tender.
