400g leaf spinach, washed and trimmed (use young, tender leaves)

8 spring onions

5ml Dijon mustard

6tbsp olive oil

2tbsp white wine vinegar

salt and black pepper

40g toasted sesame seeds

 

Roughly shred the spinach and place in a salad bowl.

Snip the spring onions over the spinach.

Mix the mustard, oil, vinegar and seasoning together and pour over the spinach.

Sprinkle over the sesame seeds.
