Makes 6

 

270g/6 sheets filo pastry

125g soft cheese

50g fresh spinach

1 small onion, diced

1 red pepper, chopped

50g melted butter

 

Fry onion and pepper until cooked. Place in bowl.

Boil spinach until just wilted. Drain, squeeze out excess water and chop finely. Add to onion and pepper.

Combine cheese with other ingredients and mix well.

Cut each sheet of the filo pastry into two squares.

Lay out a square, brush with melted butter and cover with a second square.

Place mixture in the centre of the square and fold in a side at a time, enclosing the mixture completely and using butter to seal.

Place on a baking sheet and brush with butter.

Repeat for remaining parcels.

Bake at 200°C/400°F/Gas Mark 6 for about 10 minutes until golden.
