1tbsp olive oil

500g/1lb 2oz baby new potatoes

sea salt

 

Heat a flameproof casserole, big enough to hold the potatoes in a single layer, over a moderate heat.

Add the oil and the potatoes.

Shake the pan, cover and cook for 25-40 minutes, depending upon the size of the potatoes, shaking the pan regularly.

Add a tablespoon of water now and then if they seem to be catching.

When the potatoes are tender, sprinkle over some sea salt.
