Serves 4

 

4 old even-sized potatoes, scrubbed

50g/2oz butter

salt and pepper

 

Boil the potatoes in their skins for 15 minutes until almost cooked.

Drain, return to pan and shake dry over a low heat for a few moments.

Allow to cool and slice thickly.

Heat the butter in a frying pan and sauté the potatoes for 10-15 minutes or until golden, turning frequently.

Sprinkle with salt and pepper.
