500g potatoes

2tbsp olive oil

salt and pepper

2 tbsp fresh rosemary

 

Serves 4

 

Preheat oven to 220C/Gas 7

Peel (optional) and chop potatoes into cubes

Place potatoes in a non-stick baking dish and drizzle with olive oil.

Sprinkle liberally with salt and pepper and stir through rosemary.

Bake for 45 minutes, turning frequently until crisp and golden.
