4 sweet potatoes, about 350g each

olive oil

 

Preheat oven to 200˚C/ Gas 6.

Pour oil into roasting tin (about 5mm deep).

Peel and cut sweet potatoes into chunky chips.

Parboil until just tender (about 4 minutes).

Drain and put into hot oil in a single layer.

Roast for about 45 minutes until golden brown.

Drain on kitchen paper and serve.
