1 medium red cabbage
1 tsp butter
1 onion, peeled and chopped
2 eating apples, cored
1tbsp light soft brown sugar
3tbsp red wine vinegar
150ml red wine
Peel the tough outer leaves from the cabbage and slice it into quarters.
Remove the tough stalk from each quarter, then shred the leaves.
Grate the apples (with peel).
Melt the butter in a large pan and cook the onion until softened.
Put in the cabbage and the apples.
Add the remaining ingredients and stir well.
Bring to the boil, then cover and simmer for about an hour until tender.
Taste and season if necessary.
