4 large Desiree potatoes, peeled

4 garlic cloves, crushed

100g/4oz butter

salt and pepper

grated parmesan cheese

 

Cut the potatoes lengthways into 2.5cm/1in thick slices.

Using a potato peeler, carefully peel around the potato slices to form long ribbons or streamers.

Put the streamers into a bowl of iced water and soak for one hour.

Meanwhile soften the garlic in the melted butter.

Remove the streamers from the water and pat dry thoroughly.

Dip potato streamers in the garlic butter and place on a baking sheet.

Season to taste with salt and pepper and a sprinkling of parmesan.

Roast in hot oven for 12-15 minutes until golden.
