Serves 4

 

450g new potatoes

1 bunch watercress

8 cherry tomatoes, halved

2tbsp pumpkin seeds

3tbsp fromage frais

1tbsp cider vinegar

1tsp light brown sugar

salt

½tsp paprika

 

Wash the potatoes and cook in lightly salted boiling water until just tender, then drain and leave to cool.

Toss together the potatoes, watercress, tomatoes and pumpkin seeds.

Mix together the fromage frais, vinegar and paprika. Pour over the salad.
