2 medium onions, chopped

1tbsp olive oil

1tsp brown sugar

1tbsp plain flour

500ml vegetable stock

 

Heat the oil in a pan and gently fry the onions for about 15 minutes.

Sprinkle over the sugar and heat for 5 more minutes.

Add the plain flour and stir in until the onions are coated.

Gradually add the stock, stirring well. Bubble for 4 - 5 minutes to thicken.
