Serves 4

 

1 mango, peeled and thinly sliced

2 large tomatoes

½ cucumber, peeled and finely sliced

½ red onion, sliced into rings

1 garlic clove, crushed

2tbsp sunflower oil

1tbsp lemon juice

salt and black pepper

1tsp sugar

 

Arrange a layer of tomato slices on a large serving plate.

Top with the cucumber slices, followed by the mango and finish off with the red onion.

Crush the garlic cube. Add the oil, lemon juice, salt, pepper and sugar. Whisk together and drizzle over the salad.
