Serves 4
100g butter
2 cloves garlic, crushed
2 medium leeks, sliced thinly
1 tbsp caraway seeds
150g feta cheese, chopped coarsely
40g grated cheddar cheese
4 sheets filo pastry
2 tsp sesame seeds
Preheat oven to 220˚C. Lightly oil oven tray.
Heat half the butter in a large frying pan.
Add the garlic and leek and cook, stirring occasionally until the leek softens.
Stir in the caraway seeds and cook for 2 minutes.
Combine the leek mixture with the cheeses in a medium bowl.
Melt remaining butter in a small saucepan.
Brush one side of the filo pastry with the butter. Fold in half lengthways.
Place ¼ of the leek mixture at the bottom of one narrow edge of filo, leaving a 1cm border.
Fold opposite corner of filo diagonally across the filling to form a triangle.
Continue filling to end of filo, retaining triangular shape.
Place on tray, seam side down.
Repeat with remaining ingredients to make four triangles in total.
Brush triangles with butter and sprinkle with sesame seeds.
Bake, uncovered, for about 10 minutes or until browned lightly.
