Serves 4

 

350g parsnips, peeled and cut into chunks

2tbsp olive oil

2tbsp clear honey

salt and black pepper

 

Preheat oven to 200C/ Gas 6

Pour oil into a roasting dish and arrange parsnips in a single layer.

Sprinkle over salt and pepper.

Cook for 20 minutes.

Remove from oven. Pour honey over and toss to coat.

Return to oven and cook for a further 5 minutes.
