60g/ 2½oz butter
2 tablespoons honey
4 thyme sprigs
root vegetables, peeled and cut into chunks
Preheat oven to 200˚C Gas Mark 6.
Melt the butter in an ovenproof baking dish over medium heat.
Remove from the heat and add the vegetables and thyme.
Season and toss gently.
Cook for 30-40 minutes, turning occasionally so they caramelise evenly.
Remove from the oven ten minutes before serving and add the honey. Replace in oven and cook for remainder of the time.
