Serves 2
500g fresh gnocchi
1 garlic clove, crushed
1 red pepper, deseeded and chopped
1 onion, chopped
400g can chopped tomatoes
200g baby spinach, washed and drained
125g mozzarella
salt and black pepper
2tbsp olive oil
Preheat oven to 200C/Gas6
Cook gnocchi in salted boiling water for 2 minutes. Drain and place in a large ovenproof dish.
Heat oil in a pan and cook the onion, pepper and garlic until beginning to soften. Then add the chopped tomatoes.
Add the spinach and cook until wilted. Season.
Pour over the top of the gnocchi.
Tear the mozzarella into pieces and scatter on top of the dish.
Bake for 15 minutes until bubbling and golden.
