Makes about 24

 

75g butter

75g caster sugar

1 medium free range egg

½ tsp vanilla extract

250g plain flour

 

You will need a set of appropriate ‘cookie cutters’ such as rabbits and chicks. If you don’t have these, you could always shape the biscuits free-hand into easier shapes (such as eggs or flowers).

 

Heat oven to 180C/Gas 4.

Cream the butter and icing sugar together until pale and fluffy.

Add egg and vanilla extract and beat well.

Fold in 250g plain flour until you have a stiff dough.

Roll out on a lightly-floured surface to about 2-3mm.

Cut out as many shapes as you can.

Place on a baking sheet lined with grease-proof paper.

Bake for about 7 minutes until golden.

Place on a rack to cool.

 

To make extra special, top with Glace Icing when cool.
