Serves 2

 

1 onion

1 large carrot

1 large parsnip

½ small swede

1 large potato

2 vegetable stock cubes

1tsp mixed herbs

1 bay leaf

salt and black pepper

1tbsp vegetable gravy granules

 

Peel and chop vegetables and place in a pan. Just cover vegetables with water.

Add stock cubes, mixed herbs and bay leaf and stir.

Bring to the boil, season to taste.

Simmer for about 25 minutes or until veg is cooked as you like.

Remove bay leaf and add gravy granules, stirring until at required thickness.
