Serves 8
1.8kg potatoes (pref King Edwards)
2tsp paprika
oil or white vegetable fat
Peel potatoes and cut into two-bite pieces. Put in pan of cold, salted water. Cover and bring to the boil. Boil for 7 mins then drain well in a colander.
Add paprika to the colander. Shake potatoes roughly so they become fluffy around the edges.
Heat oven to 220˚C/ Gas 7. Heat oil or fat in roasting tin. When it sizzles add the potatoes. Tilt pan to coat.
Roast for about 1 hour.
