57g/2oz onion, finely chopped

170g/6oz courgette, grated

113g/4oz wholemeal breadcrumbs

1tbsp ground cumin

1tbsp ground coriander

2tbsp parsley, finely chopped

salt and black pepper

1 free range egg, beaten

 

Dry fry the onion until softened.

Add the courgette and cook gently for a further 6 minutes.

Turn the mixture into a bowl and allow to cool slightly.

Add the remaining ingredients.

Add water until mixture reaches correct texture.

Shape the mixture into four burgers and grill for about 15 minutes, turning carefully during cooking.
