1 large orange

175g plain chocolate

3 free range eggs

15ml single cream

 

Serves 4

 

Wash orange and thinly grate rind onto a plate.

Separate eggs.

Melt chocolate. Stir in egg yolks, cream and orange rind.

Whisk egg whites until they form stiff peaks. Gradually fold into chocolate mixture.

Spoon into bowls and refrigerate to set.
