Serves 4-6

 

1 small green pepper, deseeded and cut into cubes

150g bulgur wheat

600ml water

½ cucumber, diced

handful chopped mint

40g flaked almonds, toasted

grated rind and juice of 1 lemon

2 oranges, in segments, deseeded, plus juice

salt and ground black pepper

 

Place the bulgur wheat in a saucepan and add the water. Bring to the boil, lower the heat, cover and simmer for 10 to 15 minutes until tender.

Toss with the cucumber, green pepper, mint and roasted almonds in a serving bowl.

Add the grated lemon rind and juice.

Add orange segments and juice.

Season and toss lightly.

Garnish with the mint sprigs.
