60g butter

185g digestive biscuit crumbs

750g soft cheese

90g caster sugar

3tsp plain flour

3 free range eggs

few drops of vanilla extract

90g plain dark chocolate

 

Preheat oven to 180C/ Gas 4.

Grease a 20cm round, loose bottomed cake tin.

Melt butter in a saucepan then stir in the biscuit crumbs.

Mix well, then press the mixture into the base of the tin.

Beat the eggs with the sugar and mix with the cheese, flour and vanilla. Spoon into the biscuit base and set aside.

Melt the chocolate. Pour in a thin stream over the cheese mixture. Using the handle of a teaspoon, swirl the two mixtures together to create a marbled effect.

Bake in the oven for 45 minutes.

Leave to cool before removing from the tin.
