Serves 6

 

40g butter

2tbsp peanut oil

120g breadcrumbs

2tbsp orange zest

1 clove garlic, peeled and crushed

750g asparagus, trimmed

 

Heat half the butter and oil in a pan. Gently fry the breadcrumbs and zest until lightly browned. Remove and set aside.

Heat the remaining butter and oil in a large pan and stir-fry the garlic and asparagus until the asparagus is tender.

Serve the asparagus with the crumbs on top.
