125g plain flour

2tsp caster sugar

1tsp baking powder

½tsp salt

250ml milk

40g butter, melted

1 free range egg, lightly beaten

oil for frying

 

Makes 12

 

Mix the dry ingredients together in a large bowl.

Make a well in the centre and add the milk, butter and egg.

Whisk until you have a smooth batter.

Cover and leave to rest for 1 hour.

Lightly brush a small frying pan with oil and heat on high.

Pour in enough of the batter to cover the bottom of the pan.

Cook for 1-2 minutes each side until firm and golden.

 

Serve with maple syrup and blueberries for an authentic American taste.
